Tips on Using a Bain Marie
A bain marie is a French catering equipment commonly used for slowly heating the food until they reach the melting temperature. Chocolate, cheesecakes,custards, and Hollandaise sauce may be used in a bain marie.
- Fill the bottom pot of your catering equipment with water and then set it on the stove top. Half-way submerge the top pot of the bain marie while resting in the bottom pot.
- Place food items or recipe into the top pot and then turn the stove to a moderate heat or heat based in the directions.
- Use a thermometer and make sure the water gets up to 220 degrees fahrenheit. Use a candy thermometer to calculate the candy temperature.
- Control the water temperature of the pot by adding salt to make it hotter or alcohol to make it cooler.
